Very excited to join the forum from Baltimore as I’m passionate about my smoking. I use a custom built smoker that I’ll add some photos of, a weber, and a soon to arrive La Caja China with smoke gun. I’ve also built a wood burning oven to pair some wicked bread with my smoked meats. Personal favorite so far has been Deer Pastrami with homemade kraut(should also add that I love pickling) and rye bread.
Partial to NC BBQ for pig and I try to mimic the best of the best in NC which is without doubt Webers in my opinion. Spent a couple hours with the pit master there and I suggest everyone stop and meet him if in the area. Hungry just thinking about it.
