My 10 hours 4 lb brisket

Well I put it on at 9:30 Sunday morning, ASSUMING it would take roughly 1.5 hrs/lb.   I had it set at 225 with some hickory and mesquite in my Smokin-It electric smoker.  It sat in the low 160s for hours, I turned it up to 250 around 4:30 pm, it wasn't ready until 7:30!  Next time I'll use a little more wood, went with the less wood smoke is better than too much smoke motto this time.  Turned out nice and juicy with a slight smoke flavor.   The Smokin-it doesn't seem to produce much of a smoke ring, but as long as I get tasty results I don't really care.

Yep, tasted great and was juicier than it looked in the photos (just use my phone for Q pics).  It was so good in fact that we ended up eating it standing up at the cutting board lol.

LOLAfter all the reading I've done on this forum, I seriously think this is how most smoked BBQ is consumed when at home! haha
 
I shutter to think there are people out there who don't eat right off the cutting board, lol.
I know! I seriously think this happens because of all the pent up excitement from the anticipation while it's cooking. Plus that smell is hangin in the air all day making everyone H-U-N-G-R-Y!

When we have backyard parties in the summer, I try to have the pork butt finishing up around the time guests arrive so they can smell it cooking and get their appetites going. I could finish it sooner and start resting it in the cooler hours earlier, but I find people enjoy it more when they've smelled it cooking a little. That also gets me a lot of volunteers to help me pull the pork before serving it. (But as predicted they usually eat their share while they are helping me!) lol But I love it!
 
My wife hates that. When I pull the pork I pick at it so much that when it's time to "sit down" and eat I'm not hungry. Really ticks her off !! :-)

Roger, I'm right there with ya, I think I consume probably 1/4 of the bark while I'm pulling one apart. To appease the wife, I just occassionaly set some off to the side for her, when I do that, she doesn't get on me as much.
