Decided I needed to smoke more. Because just turkey and pulled pork the past week weren't enough. I settled on some Spare Ribs and did I get a DEAL on them. First thing I did was to trim them to make them St. Louis Style. Next thing I did was rip the membrane off, it came off in one piece and really easily. Then I put on a really nice rub and onto the smoker for a modified 3-2-1. I went with a 3-1-.5. Smoked was rolling for first 3 and last .5. I used Hickory and Cherry. I kept the smoker at 240˚ for the whole smoke. They were PERFECT. Awesome smoke ring and just enough pull to the meat. Enjoy the pics!

Out of the package

Trimmed to St. Louis Style

Now you see it (membrane)

Now you don't... well you do, it's just sitting up there now... haha

Beautiful st. louis style ribs

Rub it in a little :)

after 3 hours on the smoke.

After modified 3-2-1. Looks awesome.

How did you get the smoke ring using the smoker?
Not really sure what you mean by that?? I used a smoker... therefore I got a smoke ring... ???

That thin red strip on the topside of your rib. Its hard to get that effect with an electric smoker alone. I've heard folks mixing crushed charcoal briquets or lump charcoal along with wood chips to obtain the smoke ring. I was wondering if you used any of those.

I don't use an electric smoker....Masterbuilt propane smokehouse. Come on now... Read my signature... :)

Beauties there NWO!

I'm a babyback man myself...find the spares a little too fatty, but yours look awesome!

BTW...what did you do with the trimmings?

Bill

Ya, it's all about preference. I like whatever is on sale...hahaha... I just pitch the trimmings. I know some will baulk at that idea but its not worth the hassle for me personally
