Please see the attached recepie for Irish Whiskey Sausage.....thinking of doing a bunch for a St. Paddy's day party.  Any thoughts/input would be appretiated. Flavors and ingredient mix looks good. Whiskey is an odd addition but could be flavorful.

If it's the Irish cream style whiskey as listed, then it should have a milder, creamy edge to it. Based on ingredients, this sounds pretty good. Take some pics!
 
The "whisky" in the recipe is, unless it's a typo, a syrupy sweet cream based liqueur, similar to Bailey's. I'm curious if they meant Irish whisky or Irish cream, as the cream would seem an odd ingredient.

A side note, being a good Irish American, I've always been fascinated by both whisky itself and the traditions surrounding it. Did you know, the Gaelic word for it, "uisce beatha"  literally translated means "water of life"? Given the adverse effects it tends to have on the lives of its more serious fanatics, I've always found this sadly ironic.

I was taught that Irish Whisky wasn't bad for you if you drank it at a wedding, a wake or on a day with a "y" in it.
 
I see you plan on using sheep casings.  I would not stuff it too tight in the casing as the oats can swell after absorbing moisture in the meat mix.

And there is huge flavor difference between an Irish Creme Liqueur and Irish "Whiskey".    As a friend of mine used to say, one is for girly drinks and the other is for manly drinks so which are 'ya gonna order?

Although the title of the recipe say's Irish "Whiskey", the ingredient list in Waz's recipe calls for Bushmill's Irish Creme.  I found this info on their website:

We have now ceased production of Bushmills Irish Cream as demand for the product has remained very small.

You could probably substitute Baileys Irish Cream or a similar cream liqueur in the same quantity as called for in the recipe.
 
I'll end up going the Bailey's route then and more than likely Hog Sausage Casings due to avaliability.

Ok....made 135 lbs on saturday, It came out great! Great flavor, mild, everything could be tasted. it will be a big hit at our fund raiser this Saturday.....
