Uhhhh, hi. That's the smoothest opening line I could come up with. Anyways, now that the awkward part is out of the way; a little about myself. I'm a 33 y/o Navy Vet. from Atlanta (Go Falcons!) but live in DC (Go 'Skins!). love football and fantasy football. hate the Cowboys. I'm pretty sarcastic and am always joking around. Been married for a year and a half to my college sweetheart. Three & a half if you count the two years we lived together prior. We have a yorkie named Honey who I didn't like at first. I wanted a more manly dog and hated walking a girl dog (ie: a dog FOR girls) with a girl name, but she follows me around so much that she forced me to like her. I still hate the name tho, so I call her mutt, rat, or chewy (cuz she looks like chewbacca). She's a regular yorkie and not a teacup yorkie, so I tell myself that's a LITTLE more manly. 

as to why i'm here, i am trying to perfect my grill/BBQ techniques. I've always backyard grilled, but I've decided a year ago to get serious about it. The wife just nods her head and smiles when I talk about grilling or new stuff/techniques I want to try, so I figured I'd find someplace where people will listen and share my excitement. My fav things to grill are steaks and slow-cooked ribs (never boiled. Boiling is a sin). My least favorite is kabobs just because the prep takes FOREVER! My weak area is sides. I'm just not imaginative enough to come up with good ones. I'm a meat and potatoes kinda guy. But I'm always looking to try something new, so suggestions are welcome.

Yeah, I know how you feel about the dog thing.  My wife came with a miniature Schnauzer.  I didn't like her at first (the Schnauzer, that is.  I need to clarify that), but she grew on me.  She is actually a very good dog.  A little high strung, but good with everybody in general, except the mailman and squirrels.  She HATES squirrels for some reason.

I have really become attached to her, she is a turd.  I think "Schnauzer" is German for "grubbing for food constantly".  She is really good at it.  If anything hits the floor in the kitchen, no matter where she is in the house, she will hear it and come running.  Our floor is very clean with her around.

I'm a huge believer in "if there's no pic, then it didn't happen" @PGSmoker. In fact, I smoked 2 racks of beef ribs this afternoon (cherry wood, briquettes, indirect heat, minion method). After 2 hours of smoking I wrapped the ribs in foil with a little apple cider and put them back on for another hour. I won't use cider again because even tho the wife raved about the ribs and the flavor, they came out tasting too boiled to me. I loathe boiled ribs. Anyways, the cherry wood gave it a nice flavor and a pretty good smoke ring. I don't know if you can see it in the pic, I have a crappy camera phone


While the ribs were smoking, I made a fatty piston using some PVC piping I purchased earlier, a hacksaw, and a nail file to remove the curly pieces of PVC after cutting (I didn't have sand paper). Then I started prepping my blueberry fatty for breakfast tomorrow morning





I let it firm up in the freezer for an hour and then put it in the fridge. Tomorrow I'll re-freeze it, smoke it, and post the results. This is my first fatty, so I hope it's good. 

Glad I'm not alone! @Scooter! And my dog scavenges all the time too. It's kind of embarrassing when I take her to the park. She acts like I don't feed her! But she has a bowl full of dog food at home and gets a steady supply of t-bones from me grilling lol

Serving was my pleasure @ Kat! But full disclosure: they paid me to do it *lol*. I'm amazed at how many ladies love grilling. I see a lot since I joined a few message boards and followed a few blogs. My wife loves grilled food, but thinks it's too dirty to do it herself. That, and your clothes and hair get all smokey. Guess that's what I get for marrying a girly girl lol.

ok kat. I do have a question. I could search for it, but hey; I've been grilling and prepping all day in the cold and rain. I'm gonna be lazy now lol. I'm tired of all these restrictions. I don't have a sig, my posts gotta get approved, hell, I prolly can't even post pics. What's a brotha gotta do to get these restrictions lifted? I understand they're here for a purpose (stop spammers and solicitors and make sure noobs aren't making inappropriate posts), just wanna know when they'll be gone

edit: just so there's context to this post, I replied to everyone's welcome in one post and added some pics of the stuff I grilled/made/prepped today and how I made it and it said something about needing a review or approval. Now I don't seem like a mad man going on about nothing lol

welcome!! i was a newbe too...earlier this month. i dont know exactly...dont remember....but think it only took a few posts before they were approved....and i think it happened within an hour.  l recall gettin a little notification sayin it wouldnt be long.

i ALSO remembwr feeling a bit frustrated like you (lol) so just sit back, take a deep breath, have a beer...and it will be over before you know it...lol

Hello from one Georgian to another (SE, here), and also a newbie.  I agree, the new software is a PITA :-) and I've not even tried to post pics.  I've been told that the moderators can not control the software, but it seems that "someone" should  be able to control the settings of the software, and after a few days realize when a person is normal/legit and not a spammer/hacker etc.. .  I kinda got discouraged myself and haven't been back in several weeks. 

However, the fact that I see TONS of great information on the forum brought me back. Well, that and the fact that I tried Papas wet brine on a pork loin, with which we are trying our first ever CB.  The meat (smoking it tomorrow, did a taste test) taste awesome, and is so juicy. I can't wait to smoke it and see how it turns out.

Also, hope you saw the post I made in regards to newbies posting a few weeks ago, as I too was discouraged.  It explains a good deal about posting, etc and how to get past the dang software crap.

It is raining in SE Georgia, how does in look up there??

Anywho, no discouragement here. I know I'm not going anywhere. Of all the bbq forums I've come across in the last week, this one has the most of what I'm looking for (recipes, methods, tips, reviews, and "what not to do"). Just wanna know how long I'm gonna be held down by the man lol. Good luck with your cb & I'll look through your posts for the one you referenced. Seems like it contains the info I'm looking for. So how SE are you? Kings Bay SE or Brunswick SE? I went to Valdosta State and road tripped frequently to Jacksonville & savannah, so I've been all over SEGA. I don't know if you guys call southeast ga SEGA, but you certainly should start lol. 

As far as weather, it's a little bit of everything these last few days. It's dumb cold and windy, it's been raining, hailing, and sleeting the last couple of days and it's supposed to sleet/snow this weekend, but it's what they call "conversational snow". Just enough snow where people talk about it, but not enough to shovel or stop traffic. Great weather to grill in. Thank God for covered patios. The mutt'll be happy. She LOVES snow. And she has a huge beef rib bone to gnaw on in between snow romps. The rat has it pretty good.
