Pimento Cheese, With "Q" View?

I just love pimento cheese, its probably one of my favorite foods and so easy to make. I decided to make some the other day. I went to the grocery store, picked up the cheese and pimentos, but when I got to the spot where Duke's mayonnaise sits they were all out.

 NOOOOOOOOOOOOO!!!! So I had to use Hellmann's. But despite this near disaster, It still turned out great!


1 lb. Sharp Cheddar, 1 lb. Mild Cheddar, and 1 lb. Pepper Jack


Cheese after I ran it through the food processor.


Added 2 jars of pimentos, and 2 cups of "Hellmann's Mayo.


Added some black pepper, onion powder, garlic powder, cayenne pepper, ancho Chile powder, and a little Tabasco.


I let it sit over night in the fridge, so the flavors could blend. mmmmmm good.

I wonder what this would be like with smoked cheese? Has anyone tried it? Thanks for looking!
 
Man, I love pimento cheese!

I made some last year with smoked gouda!!!  It was AWESOME!  Never thought about doing a q-view though...shame on me!

Next time...don't be too hard on me Kat

That looks great. Care to share the recipe? How much of each you used.
It's pretty simple. 1 lb. sharp cheddar, 1 lb. mild cheddar, 1 lb. pepper jack, 2 4 oz. jars of pimentos, 2 cups of mayo, preferably Duke's. Then I add some pepper, garlic, onion, Tabasco, just until it taste right.
 
And if you have never had a grilled pimento cheese sandwich, you have to try that also....

I make something very similar but add a bit of mustard powder and use Velveta shreds instead of pepper jack and about a tablespoon of sugar.  I also just eyeball the mayo as I mix it.  I'll have to try pepper jack next time I make some.  Thanks for sharing

Oh, and for those who have never made pimento cheese, you need to put it in a container and let it sit in the fridge overnight for the flavors to meld for the best taste.  It's great on potato bread for sandwiches (grilled or otherwise).
 
Some Good Stuff! Smoked Cheese would be great but I would suggest only make 1/3 of the cheese smoked. You want to be able to taste the other flavors...JJ

Thanks man,I like the mustard powder idea, I'm gonna have to try it, Velveeta is always good, it adds a slightly different texture. I really like the pepper jack it add a little kick. And yes, letting it sit over night in the fridge is very important. It's just not the same if you don't.
