I have been smoking for a few months now and I just have a couple of hardware questions. First despite a few minor flaws I'm very happy with both these devices I just have some questions and all input is appreciated. I love the maverick but for some reason now it seems to be in silent mode or something and I can't get the audible alarm to come on. It shows the alarm symbol but makes no noise. I'd like to mount the grill probe and meat probes throught the side of my grill but I'm not sure what size grommets I'm supposed to use. I was reading some posts on here and plan on sealing some areas with the high heat silicone so I lose less smoke. I have only used the propane but have been happy with the results with my biggest problem being keeping the temps down low enough. I am expecting delivery of a needle valve any day now which should help. I also plan on building a wind break because I just threw something together the other day temporarily and it made a big diffrence although I'm sure the 14 degree temps outside helped. I live on long Island so temps here go from freezing cold in the winter to hot and humid in the summers, any advice on dealing with the temp changes would also be appreciated. I have only the one set of probes so I'm curiouse how do you guys handle cooking diffrent size pieces of meat? Thanks everyone and sorry for the long winded questions.
 
If you go to the Maverick home page you can buy the grommets directly from them. I think it says the hole size is 5/16, but my memory has been know to be faulty.

Generally, you are going to have to practice in all of the various conditions to know how your equipment will respond. Keep a log of conditions and what you did so that you know what worked and what doesn't. Here in NTexas, I deal more with heat issues than cold, so I just keep the fire as low as I can. I have read that wrapping the cooking chamber with a welding blanket helps in colder climates.
 
Hi thanks for the tip about the grommets. Living in NY my biggest issue is actually to much heat with the smoker I have because it has to big of a burner on it. 
 
There are many times during the summer where my smoker sitting out in the sun shows 200 before I have even started the fire...

Have you tried throttling back at the propane tank valve in addition to having the smoker temp set at it's lowest setting?  I know some would say not to do those kind of things, but I didn't get to looking this way by not playing with fire...
 
My smoker has an adjustable regulator but when you turn it down low it tends to blow out. I have found the wind break to make a huge difference. It was a cheap smoker I only paid a little over 100 bucks for it. I wanted to know if this was something I was going to like, and now I'm hooked. Now i'm looking into building a uds as I've seen a local place advertising the drums for only 30 dollars. I figure it will make a nice project over the summer.
 
I thought about building one. However, I am trying to move a way from propane, so I decided to be lazy and go with a Weber kettle grill and add the Smoke EZ insert.
