Just found this site and it looks like I can learn a lot here. I just started smoking on my gas grill. Metal pan on one side with chips and water over one burner. Fish on the other side of the grill 225 degrees based on the thermometer in the lid. The fish was cooked but not much smoked flavor. I know it will get better with time.

I am planning on getting a smaller gas smoker (have to be prepared in case of a hurricane down here). Still  undecided on which one.
