I started with a couple of rinsed whole chickens.

Tossed them in a brine and let them bathe for around four hours.

After a quick rub down they're on the throne and ready for some smoke!

I sprayed them down every hour with some apple juice and pulled them after about four hours. They were juicy!


And of course I had to whip up some of PGSmokers BDSE BBQ sauce on the side; that stuff is good. Not one complaint in the house on this meal!

The beer is only for moisture on the inside, you really can't taste any beer flavor with the finished chicken. Any beer will do but I would stay away from the ultra darks. I have also heard of using orange soda instead of beer. I haven't tried it but it sounds interesting. That might add some flavor.

I do ALOT of beer can chickens, and use light beer 100% of the time.  I do find that I get a subtle beer flavor in the meat.  One EXCELLENT substitute for beer, though, is Sprite.   I even use it in a spray bottle as well

The sprite sounds pretty interesting. I do alot of Beercan chickens but always on the grill. I will definitely try the sprite.
This was the first two in the smoker.
 
Oh, those look good.  I have to try that.  I am not a drinker so what beer does everyone recommend for this?
I do coke can, or rootbeer can chicken all the time. I emtpy half the can and sometime sqeeze a fresh lemon in the can. Works out great. You do no get a lot of flavor from the soda but good moisture. 
 
I tried to keep the temp around 275 for crispier skin. The time was between 3.5 and 4 hours, then I let them sit for about a half you before cutting.
