pallet fire taste and smell on first use of mes

kelly from detroit, first use of masterbuilt electric smoker tried a rump roast with hickery chips, smoke ring tasted and smelled like a pallet fire not sure on how to add chips
 
Kelly, welcome to the forum. I'm not sure what a pallet fire tastes like, but not tasty I'm guessing. I have an MES40  and I don't use chips anymore since I got my AMNPS (pellet smoke generator). When I did use chips I would not add many at a time or I would get billowing white smoke (nasty tasting). You want TBS (thin blue smoke) which should smell sweet coming out of the smoker.

You will need to add more chips fairly often to maintain smoke. Maybe every 20-30 minutes. In time you will learn what you like.

 You may want to think about the AMNPS from http://www.amazenproducts.com/. It is a great partner to an electric smoker.

Chuck gave some great advice. Other websites talk about loading the chip drawer full and getting 2 hours of smoke but while loading full gives lots of smoke it is not what you want and there is a higher risk of fire. Smaller amounts of chips, 1/4 Cup at a time, every 30 minutes will give a better result. Get the AMNPS it let's you smoke without reloading for up to 10 hours. It's nice to get some sleep on an overnight smoke...JJ
