I made a batch of breakfast sausage a few weeks ago and it turned out great. Burned through that stuff in a hurry, so time for another batch. Figured I would rather make a bunch this go around so I found some butts for $1.68/lb and got to work!

Here is my recipe, it's Pops recipe with a few tweaks:

8oz Kosher Salt

2oz Rubbed Sage

1.5oz Brown Sugar

1oz White Pepper

1oz Black Pepper

Use .5oz per lb, I cube all of the meat and season the cubed meat in the tub BEFORE grinding. I let the grinder do the heavy mixing for me, easier to mix the seasoning into the cubed pieces than into ground meat in my opinion.

Wanted to start teaching the boy about where the sausage he LOVES really comes from and what is involved in making it. He loved this, getting his hands dirty and all. Started off by feeding me the meat to grind. He's getting a little restless though....

So, here he is, doing it all. He loved it! I literally just let him finish the rest.


We like a bit of texture in our sausage, so we only regrind about 60% to 70% of the coarse grind. Kind of hard to see here, but the center of the tub has the coarse grind and the edges have the 2nd grind.


Wife even jumped in to help bag (she would kill me for posting a pic of her in her "comfy clothes", shhh - don't tell).

We fold over the tops of the bag and fill, she is folding them back and wiping any areas that got sausage on them off before I vac seal.


A reward for my sausage maker in training, Smoking B's microwave chocolate cake and some ice cream. Positive reinforcement!

You sir are one lucky feller. I can't get my wife or girls to help me. Well, my 4yo would love to help me, but she gets bored really quick. 10yo, gotta beat into helping me. BUT, it surely is amazing at how fast they are to want to fry up something I just got done making.

I like what I see here.  Love Pops sausage and going to make more myself.  Teaching kids where things come from and that yes...you have to help out is one of life's best lessons.

Very nice - enjoy the younger helpers while you can Mine are great helpers but I have to bribe them sometimes with snack sticks or something, Good job on teaching the younger folks he will remember it for a long time.

Very nice work.  It is a treat to have everyone join in.  My little girl (4yrs old) loves to grind the meat also.  So whenever I make sausage I always ask her to help.

Looks great.  I grew up butchering with my family and work hard to try and include my daughter and wife in the process now and give them good sausage and BBQ to keep the interest.  Great tradition.

Great looking sausage! And a great way to spend time with the kids! I try and get my helpers in the kitchen and the boat shed as often as possible!
 
Good job on the sausage making....GREAT job parenting, letting him take over the operation. Brought back memories....my sons 38 now and doing well so I believe including them as much as possible helps. Congrats on making the banner....you're on your own when the wife sees it

I had this problem then I told them the story of the Little Red Hen... 

If they don't help they don't get to enjoy it. It only took once giving it away as gift boxes so no one got any and they help me whenever I need it now.  I love that story it is so simple a story that it works.
