So I just got some spare ribs from snakeriverfarms.com and I was wondering if anyone had guidance on how not to ruin them. I've been doing the 3-2-1 method for ribs I pick up at the local grocery store but these were a lot more expensive and I don't want to over cook them.
 
Pack them back up and send them to me. Can't go wrong. Seriously though, if the 3-2-1 has worked for you in the past I would suggest you stay with what you know. Personally, I do the 3-2-until they are 170 IT in the middle.
 
Tough question. One man's perfect ribs are another man's ruined ribs. For me, "fall off the bone" ribs are approaching the ruined end of the spectrum. I like a little bite, so I generally go with either a 3-1-.5 or approximately 4 hours straight smoke. They're done when they bend easily in the middle and are leaking juice at the surface. If you like fall off the bone, then 3-2-1 is the way to go.
 
Gosh, no disrespect, but, I thought the whole premise behind Bar-b-que was to take inexpensive cuts of meat and make them great.  I would definitely say that 125 bucks for 8 racks of ribs is not inexpensive.  How much better could they taste?  And, who needs the pressure of screwing them up?  The "cheap" ribs I make are better than any restaurant I have ever gone to.  Again, no disrespect to you at all, just sayin'.

Yeah, I actually think that the more expensive cuts are harder to screw up!  You have a better piece of meat and if you use your experience and do what you always do, you will come out shining like a star with them high dollar ribs.

Just don't burn the rub or sauce on them and you'll be fine!!!!

Stick with what works for you.  Just because they are more expensive, they are still ribs.  I use a 3-1.5-1 at 250 on my spares, keeps them from falling apart, but they are more than tender enough.

Thanks for the comments and to scootermagoo the ribs I got was the St. Louis spare ribs for 24 dollars and I got just the one and it was my Valentine's present from my wife.
