My wife loves smoked chicken wings and asked if I would make them for Valentine's Day dinner for her. Gotta love that woman!

So I fired up the Kamado Kooker with Royal Oak lump and a couple chunks of cherry wood, got it holding at 250*, and turned my attention to the chicken wings.

Tossed lightly in canola oil, kosher salt, coarse black pepper, and Weber's Kickin' Chicken.

Placed directly on the grate at 250* for about an hour. Then I opened up the vents and brought the smoker up to 350* to crisp up the skin. Once the smoker reached 350* I turned the wings over and cooked another 10 minutes. Here they are ready to come off the smoker.

While the wings were smoking I whipped up your basic buffalo sauce. A stick of butter, 3/4 cup of Frank's Redhot, 2 cloves of garlic minced, tbsp crushed red pepper, tbsp coarse black pepper, tsp cayenne pepper. Bring all ingredients to a simmer while whisking, simmer for ten minutes, take off the heat and go get the wings. Toss wings in sauce ...

serve with celery and blue cheese ...

Not the fanciest Valentine's Day dinner I have ever prepared but it is what the wife wanted and was very tasty! Thanks for looking everyone.
