My wonderful wife gave me (us) this last Christmas, a Masterbuilt Pro gas smoker from the HomeDepot.  I was a little intimidated at first, but tossed some ribs in, dried them out pretty good and decided I could do better.  So I started reading online and found that this is by far the best forum for outdoor cooking. Such encouragement and great ideas shared from all over the country gave me more confidence to smoke some more ribs, butts, loins, chicken, turkey breasts, and an attempt at beef jerky.  The biggest trouble I see with all this smoking, is keeping it off my butt.

Looking forward to learning more and getting more smoke in my eyes!

Hey eric welcome to the forum.I myself am new at smoking .I have done some ribs/jerky/pork/sausage so far. Looking to do a brisket and some other in the near future. I got the brinkman smoker for xmas from my wife.I am in az aswell. over by the PV mall area. If you have any ideas or things that work for you let me know.always up for smokeing talk.

Great. I plan on smoking a couple pork butts this weekend. If you happen to see excessive amounts of smoke around Shea and104, don't be alarmed, I'm still practicing. :)

Watched a few videos on bacon yesterday, I think i can do that. Super simple looking.
Need to find a butcher somewhere, ever go to one?

Well I'll have to lean on you a little for that. I tried a turkey breast and it certainly wasn't what I hoped it would be. I didn't have it all the way cooked for starters. Lol
 
LOL a lil chewy Eh...I use an old Brinkman water smoker, takes me 12 hours to do 2 Turkeys(13-14 lb each) Usually for TurkeyDay but as they disappear so fast gonna do a couple midway this year. Welcome to visit and take your notes at that time :-)
 
I also do quite a bit of Dutch oven cooking,

trying to find a group to have a DOG (Dutch Oven Gathering)

On a Weekend for a day.

PS Just because I use DO's, Doesn't meant I cannot make a nice thick pink layer of smoke on some meat . Turkeys my Favorite..  Problem is. 2 only last an hour or so on Thanksgiving  :(
