My first smoke was a picnic.  It started at 8 pounds.  I've got a lot going on lately, but I just HAD to try out my new smoker.  Being tight on time, I decided to cut it into smaller pieces so it would cook faster.  I tried to get the bone out, and when I finally got it free, it still had a lot of meat on it, so I smoked it, too!  :D

I read something about putting it in a foil pan for smoking, to catch the juices, but I decided to try the corningware instead.  I was torn as to whether or not I should foil it at 165, so I figured the corningware lids would be just as good if I decided to cover them.

They relaxed in the smoker for 5 hours.  Once they hit 165, I did lid them, and moved them to the oven to save propane.  They finished for 3 1/2 hours in the oven, when they hit 205.  I left the lids on and let them rest in the oven after I turned it off.

They are still resting as I'm posting this, so I haven't had a piece yet.  They smell great, so I hope they taste good, too!

My wife would tear me a new one if I ever put her Corning ware in the smoker! Let us know how that cleans up.....the shoulder looks nice. Bet it was good.

There are some great foil pans you can get at the grocery stores...and cheaper if you get them at Sam's or Costco.  I use them all the time!

Just finished pulling it, and @#*(%$ it's good!

Oh, and I run the kitchen around here, so my wife won't even know, much less care about the corningware.  :P  (She's an engineer, and when she cooks, it's .... not the best.  o.0  )

Now the beans are in the oven, corn's ready to cook, and we should have a nice dinner by the time Sugar Momma gets home!  :D

Looks great! I am trying to be green and didn't want to use disposable pans so I got a cheap roasting pan and throw foil over it. I have only done one pork shoulder and it turned out fine and I only have to throw out the foil cover.

Pork looks great and so does the Corningware post cleanup!!!

Know what you mean about the wife not caring about the kitchen, I'm the cook in our house and boy is she glad.

Big difference is Steph can cook!!!  She just doesn't like to...

Can't wait to get my shoulder going... Waiting for this dang weather to break!!
I don't know how bad the weather is up your way, but it was chilly and rainy here.  But I couldn't wait!  I had to take the new smoker out on her maiden voyage.  :)

Thanks for the compliments, everyone.  We just finished dinner, and it was amazzzinnnnggg!!!  I have solved the problem of not being able to find satisfactory bbq in town.

First smoke I ever done, I put my wife's 150.00 SS roasting pan in my old smoker.   She scrubbed on that thing for an hour.   Needless to say, she got over it.    I just added a little character to it.

Pork looks awesome!   Great job

Pans, lids, foil Oh MY!!! I do my butts and picnics right on the smoker racks to get that OH so good bark!!!! No mess no fuss no clean up!

Some engineers keep it simple and run the kitchen too!! Well I run the outdoor kitchen and share the indoor kitchen!!!

Hey if you have gone all green I have carbonless charcoal for you :)  just kidding.  I went to the second hand store and bought a few used items like roasting pans and flat wear to use in the smoker.  The last time I was in there I found two unused lodge dutch ovens for five bucks a piece so I bought those too.  Things that people throw out.

white vinegar.
Thanks TJ,  I'll see if I can get it cleaned up for her.   I no longer put in pans, just straight on the rack.   On my old smoker that was the only way I could put a water pan under it.

I was concerned about capturing the juices, so I put it in a pan.  The bark wasn't crispy at all, but the rub added a nice flavor once the meat was pulled.  There was also a bit of rub in the juices that I poured back into the pulled meat, so that was awesome.

Thanks for the tips!  While eating that dinner, my wife said, "Mmmm....food is love."  I think that's a hint that I should cook more so she'll love me more.  :P

I found the fatties forums so I think I'm going to make a cheeseburger fatty this weekend.  :D
