My first smoke was a picnic. It started at 8 pounds. I've got a lot going on lately, but I just HAD to try out my new smoker. Being tight on time, I decided to cut it into smaller pieces so it would cook faster. I tried to get the bone out, and when I finally got it free, it still had a lot of meat on it, so I smoked it, too! :D
I read something about putting it in a foil pan for smoking, to catch the juices, but I decided to try the corningware instead. I was torn as to whether or not I should foil it at 165, so I figured the corningware lids would be just as good if I decided to cover them.
They relaxed in the smoker for 5 hours. Once they hit 165, I did lid them, and moved them to the oven to save propane. They finished for 3 1/2 hours in the oven, when they hit 205. I left the lids on and let them rest in the oven after I turned it off.
They are still resting as I'm posting this, so I haven't had a piece yet. They smell great, so I hope they taste good, too!
