Smoking a Duck for the first time and going to smoke it for Easter.

Wasn't sure what section to put about smoking a Duck, so figured I put it in the Poultry section.  I have a Duck I bought last month in the Freezer and plan on Smoking it for Easter.  I have done Duck before in the Oven, but never smoked it... so I have some questions!  

Do I need to soak the Duck in Brine, like you do Chicken?  

What type of Wood chunks is best to smoke a Duck.  A guy in Troy Illinois sells Pecan, Mesquite, Cherry and Apple.  Which do you all think would be best for Duck?  I live about 70 miles from the Troy area, but will be in that area on Monday, so if a few could tell me what they think would be best to buy for the Duck I would appreciate it.

About how many hours does it take to Smoke a Duck and what is the Eternal Temp you want the Duck At?  The Duck ways 5 Lbs.

Yes brine it like a chicken,I like dried citrus peel,orange or mandarin in my poultry brines. I would leave the mesquite out of the equation & stick with fruit wood.The chinese use pear,apple or similiar for all their duck roasting.

I am sure Chef JJ will  be along soon to give you temps & times. Ducks are much fattier so you need to factor that in.
