6 lbs of venison and 1 lb of 70/30 ground beef...A while back I posted a thread on a venison salami that I have been making for years but it was never stuffed into any type of casing so I decided to do just that ( to make it look better) and to make some sticks out of the same mixture (because it is so good). So here they are and no since to bore you with all the details..So just look at the pictures...and yes I will do them this way everytime I make them in the future..and yes they taste great.

Nice looking smoker full of meat! Where do you get your mustard seeds? I have been getting them from P/S Seasonings and different places and they are 1/2 the size of yours.

Thanks guys...I get the Mustard seeds at Walmart they are McCormick...I normally put whole peppercorns in the salami just did not have any on hand so I used some coarse ground pepper...
 
Dang Roller, you got me wanting some meat sticks! I really got to find a good source for those casings. What size casings are you using for the sticks? Thinking about checking Butcher & Packer.

The casings are 19mm..
