the old saying...Better safe than sorry!  That is nothing to play with.  Gotta check expiration dates even on things from the Grocery.  We want all of our members to stay around for a long time!

A fermenting mash is fertile ground for ever thing floating around. That's why you add the yeast culture. If the wrong "bug" gets a head start, the outcome  could be very strange indeed. Definitely, "not good eats".
