So there is a leaning curve when using a new smoker but it's about the only way to learn. I felt ambitious today and decide to try my new smoker out. It was about 10 degrees out with a north wind. I got the smoker going and after awhile I went to the store. I was thinking baby backs but couldn't find any but found some St Louis style ribs. Said close enough. Grabbed some spices and apple juice along with some foil wrap. Got back to the house and started in.
First get the mem-brain off.
Then added some seasoning and onto the smoker.
Well like I said there is a learning curve. I had them on 225 and got temp swings of up to 300. Some times I would get lots of white smoke. I called the manufacture and we spoke. He got me going in the right direction but that was 2 hours into the cook. Well after further experimentation I think I got it but made some mistakes so far. Got the rib wrapped now but just about ready to unwrap for the last hour. Did the 3-2-1 method. I guess I could post some more pics of the money shot but I'm sure the next batch will be the money. lol
