Just out of interest I will put these photos up.I was in the big Thai store a block away from getting some rice flour for my chinese brains dish when I  saw this . I didnt buy them but it seems to be all the spices in a dry mix then you buy the minced pork & assemble. I didnt like the look of some of the ingredients but was wondering has anybody has any experience with them? There was no Southern Thai version & I cant work out the difference in content for the other 2.They are a fresh grilling sausage I worked that much out.

I did buy some thai sausage made up & even some thai dried beef & dried pork.It seems to be like jerky but not exactly it.

 
I double posted because I  got the error message.In the other thread Chef JJ  posted what looks like the real deal recipes.Hell of a lot of thai food & ingredients here but I have only  seen the dry cured sausage not the fresh.I have kaffir lime trees in big pots & rest of ingredients easy to get.I might make them as a meatball or in a muffin pan next time I am feeding the masses.

Still eating leftover brains at moment

Yes he's a king parrot,he makes a racket until I come out & feed him,brings his girl some days. I also get rosellas ,blue & red, ,rainbow lorikets,green,blue,yellow red orange & then the ones that are less welcome.White cockatoos ,they are like beavers with feathers!They chew soft timber just for the fun of it & make a hell of a racket. The black cockatoos wont eat bird seed much nicer bird.Thats down at the fishing village ,Greenwell Point.
