First pork butt

Well guys, I've been a lurker here since i got my first smoker about a year and a half ago. I figured my first pork but is a good time to start a tread and add pictures just as all of you have done for me. 

I will try and update with pics along the way.

starting with a 7lb but. Goal is to have a total cook time of 11 hours. What do you guys think about running the smoker at around 275-300?

Those are the temps I use to cook butts, I recommend cooking for at least 6 hours before checking the internal temp of the meat. At 275°-300° you should be done somewhere between 8-9 hours, YMMV. Good Luck.
 
That'll work JH, just keep an eye on the IT - pull it off at around 200* F, wrap and foil it for at least an hour, pull it and you will be in pulled pork heaven!

awesome I was worried reading some of the posts last night about everybody putting theirs on the night before, but im not one to stay up all night. hahaha i plan on pulling off at 6 or so hours and wrapping it in foil.

well she's cooking a lil faster than expected. internal temp is at 160, went ahead and wrapped the butt up. here is another pic. total time so far is just over 4 hours. should i lower my temp? its been hovering right around 280-290f.

No don't lower the temp and I don't think you will need to foil, either. I took an 8 pound picnic off at 11am, I put it on at 4:30am. 6 1/2 hours at 300°give or take. I'm getting ready to pull in about 15 min.

I'm a low and slow guy - obviously Cliff is not...but that's okay.  You need to figure out how you like to do it.  You build a nicer bark with low and slow but if you are foiling you basically nullified the bark anyway.  Keep it like it is and like Cliff said...don't foil.  It seems to be rolling right along at your elevated temps.

I'll tell ya, that is a really nice lookin' butt ya got there!

Bill Thank you, I low and slow my brisket and ribs. But for the butt i wasn't able to put it on last night. so i had to shorten the smoking time. ill check the temp and unwrap it for the duration of the smoke. 
 
just pulled of to let it rest. sry i forgot to take a picture. ill let it rest for an hour and a half the pull and enjoy with the family for the game. ill get some pictures for yall before i pull.
