I am glad I made my fridge conversion build cuz the results are awesome. First on the menu was the chicken, I figured out if it doesn't turn out good it's only few $ out of pocket. I brind it for 24 hours in water, garlic powder, onion powder, vinegar, red paprika, oregano and salt. Washed it very well and left it to dry for about 12 hours. For the rub I used onion powder, garlic powder, black peper, oregano, all spice, all mixed with olive oil for easier application. I wasn't sure how much salt gets in the chicken from the brine so I didn't add any, I figured out it's easy enough to salt it a bit while eating then end up with oversalted chicken. For my taste It didn't require any more salt. For smoking wood I used handful of apple chips, I didn't want to much smoke so I only left it in there for about 45 min. That gave it very nice sweet flavor with a hint of smoke smell. My wife could even notice the smoke and she's my biggest critic. Next time I will experiment with some other woods. I cooked it to IT in breast of 170F and covered it with aluminum foil for about 10 min. Chicken was nicely cooked throughout and it was very most and tasteefull. Oh and yes I did that beer can thing.
