It was too nice of a day yesterday NOT to smoke, so I decided to do a small run of chicken quarters for supper. I tried a lesser brand I have never used before, and boy I won't ever make that mistake again. LOTS of fat, found some pin feathers, a few nasties around the back section. Tyson or Foster Farms from now on!!!

On with the show. The piece on the right, thats a big pocket of fat on the left side, not extra skin. And the red along the back section, looked like a heart. No worries, trim and clean up and they will be just fine.


Trimmed and hit with some Wishbone Italian Dressing:


A little rub and on the grate.


Ran them about 280 degrees for an hour and a half or so until they hit 165 IT:


Glazed, on the platter and ready to serve:


Overall not bad, but again not as good of result as I get when using Foster Farms or Tyson.

How did they taste, that's the key.

Wish I could say it was a nice day here yesterday...sun was shining but 30 degrees with 20 mph winds.
