New member from Wilmington, NC. I'm new to the world of smoking but eager to learn. I have the ECB smoker and have made a few modifications to it, i.e., drilled holes in bottom of charcoal pan, moved "legs" to outside of smoker, expanded metal grate for charcoal pan. Smoked my first Boston Butt a few Saturdays back and it turned out pretty good, sans a few hiccups here and there. I have another 8 lb Butt to put in the smoker Sunday morning for the game Sunday evening. Looking forward to another try at it.
