Hello to everybody! I'm Bill, I hail from east Tennessee but live in Hawaii now for the last 28 years. Went into the Navy did 20+ years and retired here in 97, have been here since 85. I have visited this site so many time to read advice, get recipes etc. but today I decided to join. Love to smoke and BBQ and lucky for me I can do it year round here. I have several BBQ's and a landmann 30" electric smoker that I am very pleased with so far. My lovely bride of 24 years is from the islands and I have converted her to the belief that Southern cooking and American muscle cars are things to be revered. Being that I'm a ridge runner, Pork seems to get most of the action in the smoker, but, I do love a good brisket. Fish (Marlin and Ahi) also gets done quite a bit (one of my friends is a fisherman and gives them to me for free). Smoked Marlin is the bomb, nice firm meat with Alder wood smoke. Anyway I love the forum, there are people in here who have forgotten more about smoking than I will ever know, but I'm trying. Aloha, and I hope to get to know some of you very well.
