Did this yesterday while the wife was off playing bingo. She actually made the loaves, with diced onion and potato inside and told me to throw them in the oven for dinner. Well, as soon as she was gone of course, I fired up some briquettes in the old Weber, and grabbed a couple chunks of pecan.
I found an old steel, perforated platter-thing in the cupboard that went to a roasting pan we threw out years ago. So placed a foil tray under that and put the meat on!
After 1-1/2 hours @ 250°, a layer of ketchup went down. Nearly done!
Pulled at 165°. Kinda hard to see, but there was a definate, deep smoke ring. There was more pink than brown.
