If my Fiancee knew that I was at home (3hrs early) prepping a smoke, I'd be keel hauled!!! I figured that I won't be able to smoke for a couple weeks so I had to take advantage of the good weather!!! I mean how long does it take to pack some shorts, flip flops and a few t-shirts!!!

Super sunny here and 53*F. Using the Mini-WSM, Kingsford charcoal, apple wood chunks.

Tonight's meat of choice, Drumsticks. Four are injected with Acid Rain, the rest are rubbed with some rub I made quite a while ago that I'm trying to use up! All will be a dose of my bbq sauce that I made for my last batch of ribs.

So I have determined that with my Mini-WSM during the initial warm up the white smoke continues, until I hit the temp of 235*. Once I hit 235* then I get the TBS. Then it doesn't matter what the temp of the smoker is, even below 235* its TBS for the rest of the smoke.

You should probably take that mini with you - the withdrawal may be much more intense than you are anticipating

I should've shipped it to the house we're renting!!! If I'd known how well it works I would've! Hmmm wonder if they have tamale steamers on Kauai???

They look good man

  How were the injected ones?  Did you get finished & everything cleaned up in time or did you get busted?

The injected ones were good, but could've been smokin hot, if they had more time to marinate. I bought the sticks on the way home, last minute smoke decision!!!

Packed all my stuff ready to go! Even had time to spare so I had a few beers!!

Ate the last two Acid rain injected drum sticks for lunch today. The overnight rest really added more punch!!! Yumm!! The acid rain is about gone, I'll be ready for another batch when I get back!
