Here's my first attempt.  Put Diced onion, red bell pepper, a little cilantro, cheddar and monterey jack cheeses. Just used regular mild sausage. Smoked with pecan, it gave it a very subtle smoke flavor.  Surprisingly, it tasted very similar to a hashbrown casserole my wife makes - has similar contents, just the fatty is missing hashbrowns and french onion dip!

Here it is raw, just going in the WSM.  Bacon weave not the best (my first try at that) but it stayed put!


Done at last!


Time to enjoy...

 . They make for a great snack as you do a long cook...along with ABT's and Wings (cut up to cook faster).  Heck , next time try putting Tots -IN- the Fattie too. A little Maple Syrup and some good libations , you'll be energized for the long haul.

Looks very good--I have found, personally, that the 'weave' doesnt effect the flavor, just the appearance, and that appearance is short lived once the knife comes out--job well done, and thanks for posting.

Looks delicious for sure. As long as the bacon stayed on long enough to eat, thats all that matters. It's going to look like shit tomorrow anyway lol
