I have been a lurker for quite a while. I found this site in April when I was researching my smoker purchase. I ended up with an MES 30 and have been very pleased with its performance and even moreso with its versatility.
As for smokes go, I have done a 5-6 batches of ribs, 3-4 Hot smokes of Salmon using Bear's recipe, 1 cold smoke for salmon and 1 batch of cheese and 1 Turkey. As I mentioned, I have been using the resources on this board for recipes and tips in smoking and have had phenomenal success with all smokes so far. I gotta say the folks on this board really know their stuff. Newbs like myself really appreciate the time and efforts and sharing of knowledge it has taken what would have been an extensive process of trial and error into something where with a little research and preparation one can hit the ground running and really turn out some excellent smoked goods.
I am not sure what I will be able to add that other more experience members haven't already. Although I know most like to look at q view so I will be sure to document and post pictures of my future trials and tribulations.
Anyhow, thansk again to the existing members for sharing all your successes and failures so we can all benefit and learn from your experience. Figured. I should finally get off my backside and sign up and start posting.
See ya around the Board.
