New guy from Jacksonville Fl. Just retired from the Navy(CPO) bought a custom made smoker from a local guy to smoke wild pigs on and of course other meats.  Let the fun begin! Oh I have read a number of comments about wild pigs and meat quality. My rule of thumb. No matter the sex under 200 lbs I haven't had a bad piece of meat yet. 80-100 lbs primo eating size. As far as larger pigs go, while hunting if I smell the pig before I see him he gets a free pass, if I shoot a pig and it smells really rank when I walk up on it  I leave it. I don't like to do it but the place I hunt is over run with them, the land over wants them gone and it's a lot of effort for meat that will taste bad later.  Best policy for having good wild hog. Immediate cleaning and rinsing it out with fresh water and get it to a cooler if it's warm out. If you have to travel with it with out a cooler stuff the cavity with bags of ice.
