Hello everyone.  I'm Ralph from Long Island (NYS).  This looks like a really great forum with a huge amount of information and expertise represented.  I'm a pretty good cook in the kitchen, I am fair with the Weber grill, bur I don't have too much experiece with making my own slow barbecue or with smoking.  Tried to adapt my Weber grill, but found it hard to keep the temperature low enough.  Just got a Smoky Mountain Grill. Made two experimental chickens and I can't wait to branch out.  Looks like this forum will keep me busy.
