Hi All,

Its been awhile for me on "Smoking".  Gotta question, in the water pan, I need some ideas as to what to pour in the water pan?  I have done water and apple juice.  Smoking some BB Ribs this afternoon 2-2-1.

If you line the pan with foil (or add to a separate pan), chopped or sliced onion, chopped garlic, sliced carrot, sliced celery, thyme, rosemary, cracked peppercorn, beef broth with a few dashes of worsty sauce makes a great starter for finishing up your smoked beef with Aus Jus.

For chicken, anything similar to the above, with chicken broth and lemon instead of worsty (juice, fresh squeezed and/or zest), can go great with pulled chicken or as a base for a sauce.

For pork, try powdered apple chips (freshly ground) in your dry rub instead of using juice...much more flavor when applied directly to the meat...give that fruity sweetness to the flavor profile that just can't be beat, IMHO.
