My perfect wife stopped by Costco around lunch time today and picked up some ribs for us. I was working from home so i was able to also manage smoke so we could eat these at a reasonable time tonight. I finally pulled them off around 7 pm. I used a 3-2-15 minute method...hahaha. Anyhow, both turned out great, without much complaint. I used Chris Lillys rub found on here and added some brown sugar and apple juice to the foil wraps.

I feel like i always have some kind of membrane issue from Costco ribs. I know they've been skinned but i still get a decent amount of membrane of some kind on these ribs. It's been a while since we made ribs but the last time we did we used Costco ribs and the same thing happened. I've read that there's 2 layers of membrane so maybe thats the case.

I just bought this Stubbs orginal and like it a lot. Nice combination of vinegar, sweet and a wee bit of heat.

Thanks CaliforniaDan, they were pretty darn satisfying. I just got that sauce a few days ago and love it but i also like some vinegar.

Twigertwig - thanks for the tip. I was already going to try other Stubbs flavors but will start with Spicy!

Yes, Texas based. I found i'm going through it too fast though!

Didn't know there was a Stubbs rub. I'll have to check it out.
 
Lot of Stubbs products out there, including charcoal. I use the original sauce from time to time, but it is no where as good as sitting down at his table and getting it fresh out of the pot. Ol' Stubb sure knew his Q.
