This is my first time smoking and I just bought the Masterbuilt XL gas smoker. I'm going to do a test run this weekend with some ribs for the NFL playoffs. I do have a couple of questions that maybe someone will be able to answer for me.

1. Where do I need to place the ribs at? Does it matter if they are high, middle, or low in the smoker?

2. I'm going to either do baby backs or spares and I will be using the 2-2-1 or 3-2-1 that is recommended. My question is about the smoke. Do I need smoke the entire time or just for the first 2 or 3 hours?

3. I also thought about putting some beer and water in the water pan and throwing some sausage in it to let that cook a while in there. Does anyone else do that? I figured with the drippings coming down in the pan that it would give a nice flavor to the sausage.

I appreciate any help and tips! I'll make sure to take some pics and post them next week.

Right now I would put ribs in middle until you run a few tests an see where the hotspots are and get them evened out. 2 only smoke the first 2hrs after u wrap in foil there is no need for smoke.3 haven't tried this. So I can't comment sounds like a good idea though
