Hello all,  I am a smoking newbie haha.  I recently received a MECO electric smoker as a wedding gift, and I plan on smoking my first rack of ribs on it this weekend.  I have some frozen pork ribs at home, and I would like to know the exact process on thawing, applying rubs, sauces, smoking, etc.  Like I said, I am a total NOOB to this, so any help would be great.  Just the basic process, pretty much.  Thanks in advance for any help you can send my way!  (Really want to impress the wife) :)

WOW those spicy ribs look awesome!!!! Hopefully I'll be that good of a smoker one day! Thanks for the help!

I second what dirtsailor2003 said about thawing the meat.  Just put it in the fridge until thawed.  As far as fixing them.  I will pull the membrane off the back, (use thin knife and paper towel) then I rub a thin layer of mustard over them and shake on a sweet/spicy rub.  Then I fire up the smoker to 225 degrees.  Put the ribs on for 2 hours on, then I take brown sugar, tiger sauce, and spreadable butter on foil and ribs then wrap and place back on smoker for  21/2 hours.  After that I take them out and spread apple jelly, and spicy pepper jelly on them and grill them for  1 hours open.  Take them off and let sit for 5 minutes and enjoy.   This is called the 2 -21/2-1 method.   U can use the 3-2-1 method as well to get a bit more tender.  I hope this helps.  Have fun and happy smoking!
