For bacon boats (similar to abt's)

Sausage formed into a boat
Cream cheese in the middle
Bacon on top (2 two inch pieces)
Top off with a strip of BBQ sauce

Your supposed to cook them until the bacon is crisp.

How long do you think this would take in a smoker? Has anyone done this?

Sounds interesting.

My only worry would be the sausage keeping the shape of the boat. You would need to make sure the sides were not too tall or too thin as it may tend to slump as it heats before it sets if they are.  Should not be hard to overcome though.

Throw a little pulled pork and some jalapeno pieces in with the cream cheese and it's a sausage ABT (or omit the jalapeno for less heat)

I would also put rub on the outside of the "boat" and sprinkle some on top of the bacon.  You could make them smaller for individual appetizers also (along the lines of ABT concept).

So what do we call this?  A fatty boat?  BBQ boat? etc....

Edit...............

One more thought.  If you are cooking until the bacon is crisp, you will be overcooking the sausage.  Might want to pre-cook the bacon at least partially.  I doubt it will get crisp without overcooking the sausage though.
