Greetings and salutations from the “Golden Triangle” here in northern Thailand. Long story short, The Ex got everything in the split… I took an early retirement because of my health… Did not have enough cash to buy a new house and move to Scottsdale or Florida… So here I am in South East Asia for the duration. Some very nice girls in grass skirts / plenty of waterfalls and when I want a banana… We walk out to the tree in the front yard and get one. Not too bad a life, but after 4 years of Thai food… I am really starting to miss some good old fashioned BBQ & smoked meat. Our plan is to do it big… Build a masonry smokehouse and walk in frig… Then sell the excess product to the local expats here and in Bangkok. We have access to all the pork we could ever want and more…. But we have a couple of problems that I need some help with. This is not my first rodeo… but there are some things I have never had to do before. Example: The butcher I am working with has never seen a ham hung, cured and smoked. How do I teach them or show them what I want…? And no they don’t speak English. Well… I’m glad to be on board…. Thank You for letting me bend your ear.
