So we had some beautiful weather down here this weekend and decided it was time to try a Butt. Broke the smoker in the first weekend with some whole chickens and that went pretty smooth. I am hooked!!! Best pork butt I have made so far and I know I can only get better from here.Would have liked it to have a little more moisture but it was by no means dry. Used lump wood charcoal and Apple wood. A little over 8 hours cook time and got through the stall without having to wrap it in foil. Although I may try this next time just cause I would have liked a little more moisture in the meat. Pulled apart beautifully though and the key for me was the wife saying she didn't even need sauce!



Thoughts, critique, advise are all welcome!!
