We are going to try making jerky for the first time this week, as wee have a couple old roasts in the freezer that need to be used up. Going to try 2 different kinds, a Chipotle BBQ and a Ginger/Garlic/Spicy Teriyaki. The BBQ one we are planning to smoke first then dehyrdate and the Teriyaki one will just go in the dehydrater.
Question - how long is too long to marinate? We are planning on slicing and marinating tonight and not smoking till Saturday (don't have time during the week). The Teriyaki one can be done overnight in the dehydrater during the week. Is 4 days in marinade too long?
