I have a question. I have been canning Pork Shoulder for awhile now and have that down to a science. What we use it for is to eat with my homemade sauer kraut and sometimes we just pull it apart and heat it with BBQ Sauce for sandwiches. So, I got to thinking when I saw that you could buy pulled pork with BBQ Sauce in the store. Is it possible to can the pork with the sauce already in it? Anyone have any ideas?

The PP in the store...was it in the refrigerated section?

I can my bbq sauce using the water bath method because it is very acidic.  Higher ph foods should be pressure canned.

When you can the pork do you refrigerate after?
 
I think you just answered my question. Didn't think of that. The PP with sauce in the store is refridgerated.

When I can the pork without sauce I don't refridgerate the pork after canning and we use it all when we open it. So, based on that I supposed I couldn't can the pork with the sauce unless I plan to refridgerate. It's not hard to add it when I open the jar just thought I would save a step.
 
I have some extra tomatoes this year and I wanted to put up some sauce.
The Ball recipe calls for celery and that isn't something I normally
put in my sauce. Let's see what happens to mine. . .
