Tri-tip on ECB - My 1st Charcoal Smoke Ever

I didn't really know where to place this thread (coin flip between Beef or Charcoal Smokers), so if misplaced, apologies to the Mods and if it has to migrate elsewhere, no hurt feelings here.

I'm sorry, I didn't take pics of some of the essential parts, but this cook transpired on 12/1/12, and I wasn't a member here yet.

Bought a 5lb untrimmed tri-tip.

Got her home, and trimmed it up.

Rubbed with my custom Montreal blend and a touch of olive oil, then fridged to sit overnight.


Out of the fridge to temp up.


ECB (technically Charbroil H2O...Craigslist, $20) with all of the standard mods. As you can see, I haven't permanently affixed / adhered my rope gasket as of yet, but it does the job if carefully wrapped around the rim.


Minion method using Ozark Oak Lump topped with Pecan and Oak chunks.

Total smoke time, approx. 4 hours. Pulled at an IT of 130*, then onto the gasser for a reverse sear.

Afterward, left to rest naked for 15-20 min.

Final resting product, preparing for surgery. Again, sorry I'm lacking many quintessential pics (sliced view most importantly), but the end result was phenomenal.


And there you have it. I want to personally thank many of the long-time members here. I have learned basically all I know of smoking from just lurking and reading.

I take it for granted because of where I live, but it is really one of my favorite cuts of beef if done right.

Great looking tri-tip! I love the rigged gasket too! I wouldn't put it on permanently adds more character that way!

Having it that way does add one other benefit besides character.

It limits my lid removal to a minimum. I'm lazy, and don't like the removing / replacing. So it makes me ask myself, "is it absolutely necessary that I get in there?"

I'm looking forward to cooking my first one tomorrow. Did you smoke yours in the foil, or wrap midway?
 
Looks fantastic, I've got a tip in the fridge and I was crusin' the forum looking for inspiration. Consider me inspired! I've smoked tri tips before, but this will be my first reverse sear and I hope it turns out as photogenic as yours did, nice smoking!
