My wife and I have had our YS640 for year now and love it. I would just run it for a hour or so at 350º, after it cools down give it a good interior wipe down.

Then I buy a roll of biscuit's and cook them per directions on the tube. When your done you can look at the bottom of biscuits and the location in the grill each were at to get an idea of how your grill cooks.

Then I would make up a couple packages of bacon and then a couple pork butts for pulled pork to season up the interior. By this time you will be more than comfortable to get after a few racks of ribs or what ever you feel like trying!
