 I hope all the forum members had a wonderful Christmas and a Happy New Year's!

I Worked allot over the holidays so we didnt host our normal Christmas Eve bash.

So we were finally able to get most of the family together  for a dinner tomorrow.

I enjoyably  get to be in charge of the main course.

Not sure of the whole menu as some family are bringing a few things but here is what I am doing.

Meats will be my homemade smoked kielbasa, lamb, pork and Prime Rib

I deboned and tied a nice Lamb roast, about 5#

cut a nice pork loin roast of about 5#

and have a nice boneless USDA choice Rib roast of about 12#

all the roasts will get about a 3 hour smoke in  the GOSM with apple wood

then I will finish them in my Alto Shaam slow roast oven.

Rib will rare/med rare pull @130*

Lamb will be  med rare pull @ 135*

and pork will be med. being pulled and tented @ 145*

here they are all seasoned and ready to rest in the fridge till morning

will post progress in the morning as the day goes.

Lamb roast seasoned with fresh Garlic, P epper and Fresh Rosemary


beef seasoned with kosher salt, pepper, beumonde, garlic and a touch of italian  seasoning


pork loin seasoned  the same as the lamb
