First shot at pork loin

This baby just went in the smoker for my first go with pork. Brined for about 14 hours, gave it my first try at a bacon weave, and here we go.

Looks pink in the picture, but I pulled it at 147 and let rest for about 45 minutes. Temp peaked out about 151.
Tender, juicy with a very nice smoke. Very happy for my first run.

I cooked it at 228, and the family decided to cut the bacon layer to about half next time to let more of the smoke flavor come through.

Good job there kingfishcam the loin looks so good. I personally think all you do when wrapping in bacon is wasting good bacon. I love crispy bacon and when you wrap it around something it is never all crispy and the taste washes out. I will use and cover a loin or fattie in bacon fat and baste. Just my preference.

Did you do fish Sunday??
