Hello from northern Japan!

I've been smoking for about a year and still consider myself a beginner. The first thing I smoked was salmon and it was the best smoked salmon I've ever tasted, and I haven't been able to do it again! Sofar I've smoked mostly fish like salmon, steelhead, rainbow trout, and brown trout. I tried a tri tip last weekend and it came out pretty good, but it needs something else in the rub department!

I'm an Air Force Electrician, stationed in northern Japan. Most of my fall and winter activities are on hold while I'm here so it's time to learn some smoking skills! I've been poking around the site for a few days and there's a lot of good info and knowledgable people on here so I'm real excited to start putting this new info to the test. I have a Bradley electric smoker and I've been thinking about getting a more traditional type in the near future.

welcome friend,  If at all possible while you are in Japan i challenge you to try to find somewhere that serves kobe beef, it will knowck you off your feet its so good...
 
Thanks for your support Kat! I have signed up for the eCourse and it's awesome so far. There's a few things i've never heard of that I want to try out. I'm smoking a fatty as I type this and I can't wait for it to be done. I'll be posting up my salmon brine recipe real soon so whenever you do some fish you'll have to give it a try, it's real simple and tasty!

I actually have! There's a local Hibachi grill that is run by an older couple and their son, who does the cooking, and it's amazing! I've never eaten a piece of beef that tender! I might buy some and figure out a way to smoke it, any suggestions?

Brisket,  its like our Wagyu over here in the states,  it will cook faster than your normal choice brisket because of the high fat content,  watch it carefully
