Love the site and all the information on it so I thought I'd join. Pretty new to smoking. I have a MES 30 which I received for Christmas 2011. Have a done a couple of racks of ribs, salmon, beer can chicken and some ABT's. Lots of things on here that I am excited to try.

 to SMF! I am also a MES 30 owner. I highly recommend checking out the A-MAZE-N Pellet Smoker and some of the modifications (I use the mailbox mod) to use it. Definitely makes the MES a lot easier to use and smoke quality of the pellets is awesome.  Will allow you to cold smoke cheese, bacon, etc.
