Hey all, my name's Matt and I'm new to smoking and the forum. I just recieved my first smoker, Brinkmann Gourmet charcoal smoker. This weekend I just plan on starting her up and see how to maintain smoke and heat. Thanks for any advice.

Matt

Welcome aboard.  Your goals this weekend are spot on.  Making a clean burning fire and maintaining a temp range are the most important skills you'll need for this new hobby.

Once you get your fire burning clean then add your smoke wood.  A little smoke goes a long way.  Over time, you'll learn how much you like (I use one or two chunks of smoke wood).

Don't drive yourself nuts maintaining a specific temp.  Some say 225* is key.  Others say 250*.  I prefer 275* but if I'm 230 - 290* I don't get too upset as long as it rises/falls back to a mid point.

Good luck and have fun!
