Hello all....I'm from Jenks OK and new to smoking. Looks like a lot of great information here. I received a smoker for Christmas, I had been looking a while. It's a CharBroil Oklahoma Joe's version. Looks like just what I need. Did my first smoke this past weekend. I now have even more respect to those who do it well. I tried some chicken....overcooked it...dry....etc...etc... It was more about learning the operation and process. I look forward to better smokes from the info on here.
