Has anyone used a wet rub on chicken quarters and then smoked them? I have used a dry rub, but the rub seems to leave a granule taste/ texture on the meat. Am I using to much rub?? Would a wet rub work and not have that granule taste/ feel when you eat it? Thanks, Bill.

Granules?  Maybe too much rub?

Was it bad chicken that it needed that much rub?

Wet rub?  Maybe a marinade?

Good luck and good smoking.

Bill, Hello.

What is your rub recipe ( unless secret ;)- and how do you prep it? I use a lot of Whole or Seed Spices like Whole dried Chilies , Cumin Seed , Cinnamon , Clove , Whole dried - (Mex.)Oregano , Basil, Rosemary,Thyme and so on...

I will do a cursory grind of all the individual Spices and re-grind the mix before the Rubdown to get it to a more consistent powder.  The most frequent misjudgment is too much rub. This is how my Butt looks after Rubbing :

Not too much but enough to flavor. The Bark will not be as thick and gnarly as with a "heavy" coat.    The results:

Looks even better in multiples:
