Shannon's Kabanosy looked so good, its all i been thinking bout.

Been while since i made some Kabonsy.

This is a 2.5 lb batch.

Seasoning.

salt
cure 1
pepper
sugar
nutmeg
caraway seeds
 


In the grinder.



Grinding 2.5 lbs of pork butt.


Mixed in by hand with 1/8 cup distilled water.


Packed tight in a container.


Cover with cheese cloth and in the fridge for a day or two.

 
Looks good Rick!  I will have to stay tuned in because I never made Kabanosy or have I ever heard of it but Im all about making new sausage.  I will do my research.  I thought I would get a chance to do my Chorizo and Andouille this weekend but Lake Harmony iced up enough (6") that I am going to get out and get me some perch and gill and maybe even a few toothy critters before the ice is gone when it hits 50 next week!

Lookin good Rick, you seem to amaze me,,,,,, one day they are outside hangin off the awning, now in the closet, you have one wondering mine.   Too warm down there to hang out side I take it huh??LOL

I could prob hang off the dowel and awning but i think the critters would find a way to get to it. There is a 20' pine to the left side of the coach and they could climb it and get on top.

The kab is getting darker and drier. Smoke smell is more intense. Hang time maybe another day or 2.


Sam3 sent me this cool thermoworks digital thermo. Says its 67* in the pantry where the kab is hanging.

You have way more self control than I do.  I made a little over 9 lbs, and only 5 sticks survived the drying process.  I have a 15lb batch ready to stuff this evening, have to figure out a way to store them until they are dry.  My neighbor keeps offering to let me hang them in his patio, but I fell for that one before.
 
@Jim- You're from the Coal Region and never heard of Kabanos?  I thought most coal crackers grew up with a Kabo instaead of a binky.
